I know I've been updating a lot lately.  But ...

Damn, I make GREAT omelets!

Who wants to hit me?

I looove omelets. My favorite omelete is one with only cheese. Which one did you make?

Dood - I love cheese in omelets - we never have any good cheese though. (And today I refused to use the sliced "American Singles" - because that stuff is SO weird - the way it cooks in the microwave freaks me out). I also like spinach and onions. All I had to use today was brocolli and tomato (also called tomahto and spelt tomatoe but not to be confused with potahtoe). But I added a lot of pepper and a little butter into the omelet - plus salt and ketchup and wowzers! But yes - an omlet without cheese is something without something else...!

Well - they're really easy to make. You just need to know a few things. First - what goes good with eggs? Well, cheese, mushrooms, tomato - basically the veggies that go on pizza. And spices? Pepper; perky morning spices like basil, parsley, and maybe even celery. My favourite egg spice is sage - oh yes!

You can't make a good omelet w/o a good pan - smooth, about 9" in diameter, w/ curved sides. You also need a roundish flip-thingy - whatever the hell they're called. And to make a nice flippable omelet - you need to break the yolks when they're in the pan and mix it p a little. Then roll the eggs around so they pain the side of the pan a bit. then when you flip one side of the omelet over the other, kind of pull it over from the bottom and push it down for about 10 seconds. Cook more. Flip again. And then it's done!

Now I want you to go out and become a master omelet-maker!!

BUT... eggs always make me get extremely fatigued... Except this time - I feel great!

I just recently made my first good omelet. Up to this point, all the omelets I made turned out more like scrambled eggs. However, I don't get much practice because I'm not real hip on eggs.

Congratulations! Eggs are so fun. And I love rubbing them in my hair. Another good thing for the hair is honey/sugar water. Makes the hair so shiney and manageable. But don't try this in September, when all the bees are out.
