Na, we stick to gelatin, agar, cornstarch, and eggs to thicken things. Sometimes chocolate.

I use xanthum gum a lot - which is such a weird thing that I am sure that one day it will be bad for us. It isn't even listed by Wikipedia - https://en.wikipedia.org/wiki/Thickening_agent:

Alginic acid (E400), sodium alginate (E401), potassium alginate (E402), ammonium alginate (E403), calcium alginate (E404) - polysaccharides from brown algae
Agar (E406, a polysaccharide obtained from red algaes)
Carrageenan (E407, a polysaccharide obtained from red seaweeds)
Locust bean gum (E410, a natural gum polysaccharide from the seeds of the Carob tree)
Pectin (E440, a polysaccharide obtained from apple or citrus-fruit)
Gelatin (E441, made by partial hydrolysis of animal collagen)

I have also used slippery elm bark, but not too much since it can cause slippery intestine nonsense. I'd like to try locust bean gum. Eggs are the best. Cocoa is also wonderful except so hard to dissolve unless heated.

I am hoping that your cornstarch is GMO. I hate how I try to evangelicalise, but this: I hate sugars and starches. They are bad for CFS and related conditions, and for diabetes - (they also contribute to aging). So, the less you can use - and the less gluten - the better. ?yes? That is just my rude two-cents worth, I hope you don't mind.

Well then, you are doomed.

I used to love potatoes and ate them proudly. Now I avoid them, it's so sad. There are boxes of instant mashed potatoes everywhere. I am an embarrassment to my race.

Oh good.
